Cucumber Tomato Burrata Salad

Fresh keto salad that is the perfect for those hot Summer days!

Ingredients
  

  • 2 cups sliced cucumber
  • 2 cups mixed red, yellow, and orange cherry tomatoes
  • to taste pink Himalayan salt,
  • to taste ground pepper
  • 1/4 cup olive oil
  • 5 leaves fresh basil thinly sliced (or dried)
  • 1 ball burrata cheese

Method
 

  1. Combine the tomatoes, cucumbers, and basil in a bowl. Drizzle with olive oil and vinegar. Sprinkle with sugar, salt, and pepper.
  2. Stir well and add burrata ball in the center. Serve immediately or cover and refrigerate until ready to serve.
